Lam Ka Tsun, better known as K.T., joined Rosewood Hong Kong in May 2019 as Head Bartender for DarkSide and was promoted to Bar Manager in August 2023. In this role, he is responsible for spearheading the creation and concept of new cocktail menus, as well as training and supervising the team on all aspects of liquor, cocktails and DarkSide’s premium rare aged dark spirits.
K.T.’s eight years’ experience in various roles at bars has exposed him to a broad range of techniques and liquor knowledge. Prior to joining Rosewood Hong Kong, Lam spent three years with Zuma Restaurant as Head Bartender. Born and raised in Hong Kong, Lam’s career was launched when he joined KEE Club as Bartender, where he fell in love with the daily operations and developed his enduring passion for the hospitality and bar industry. // Simone Rossi brings innovative and energetic approach to his position as director of bars for Rosewood Hong Kong where he oversees bar programmes for the flagship hotel’s nine outlets, including the DarkSide destination for premium aged dark spirits.
