Over number of years bartending in London, New York, Southeast Asia, and the Middle East, Hideyuki Saito has supervised the beverage programmes at notable cocktail bars and hotels around the world, including but not limited to Soho House and the W Hotel.

Ranking in the top eight at the Bacardi Legacy 2017 Global Final cocktail competition held in Berlin, Germany, Hideyuki joined The Tokyo Edition, Toranomon in 2020 as a Director of Bars and currently oversees the Lobby Bar and Gold Bar at Edition, in addition to all thebar and collaboration programmes.
