About Roy Kong
Roy Kong has more than 19 years of experience in the bar industry, having tended bar at Grand Hyatt Hong Kong, The Macallan Whisky Bar & Lounge, and The Ritz-Carlton Bar & Lounge in Galaxy Macau, as well as St. Regis Bar in The St. Regis Macao. Having hosted more than 200 cocktail events in his career, Kong's focus is on reimagining contemporary classics that are inspired by tradition by adding his own modern twist.

Wood Ear bar is a whisky lover’s paradise. Its extensive collection is sourced mainly from auctions and private collectors, with over 400 rare labels gathered mainly from Scotland and Japan, as well as representing many other diverse regions. The highest standards are demanded, down to sourcing premium waters that match the whisky’s region in order to activate the right aromas. A range of original whisky-based cocktails creatively interpret the character of the aged spirit in new and unexpected ways.
Guest mixologist Nicola Ho will join hands with Roy to present two special cocktails for the festival. As a full-time doctor, Nicola is no stranger to medicine for the body. As for the soul, she is a firm believer in the healing powers of a well-crafted cocktail that will leave you grinning. She has collaborated with acclaimed peers both local and overseas, as well helping to launch Two Moons gin, the first ever homegrown distilled gin to win a Silver at the World Gin Awards.
