At Inatô, chef JP Cruz comes into his own with his unique approach to Filipino cuisine—but he’s been a star on the rise for quite some time. As chef Jordy Navarra’s strong second, Cruz led Toyo Eatery as its faithful sous chef, aiding Navarra as they built what would be recognised as the country’s best restaurant, time and again. Diners then got a taste of Cruz’s whimsical side with Papi Jepe Ihaw-Ihaw, a series of casual pop-ups serving delicious Filipino street food. When Inatô finally opened its doors in December 2023, Cruz immediately captivated guests, offering dishes with an undeniable Filipino soul yet comprised of local and global ingredients, served with Toyo’s award-winning hospitality in an intimate chef’s table format. While signatures from the à la carte menu have become the talk of the town (not to mention that unforgettable pinakbet), Inatô’s new “Bahala Na” three-course menu provides a fun new experience that gives Cruz and his lean, trusted team free rein.
