This ingredient-forward cocktail bar marked its second anniversary last year with a sophomore menu, championing underrated local produce across 17 inventive serves. Abby Quilal-lan once set her sights on a career in medicine, but a shift into hospitality management led her to Sofitel Philippine Plaza, and soon after, a server position at ABV. It was there that she fell for the craft, training and experimenting on her own time to climb from server to bar back to full-time bartender. That dedication carried her through head bartender posts at ABV and Bar Ten Four, wins at the Don Papa Cocktail Competition (2017) and Cointreau Cocktail Competition (2019), and now sees her consulting for bars across the city.
